Skip the clean-up with these simple yet delicious campfire meals wrapped in foil.

Lumberjack Breakfast

Cook Time: 20 min

For a hearty breakfast before a hike, this all-in-one foil pack meal is a crowd-pleaser and great for when you need a break from breakfast bars and cereal.

You can customize your ingredients and let your kids pack theirs with their own favorites.

What You’ll Need:

  • Sausage or Bacon
  • Frozen hash brown or leftover cooked potatoes
  • Eggs (1-2 per pack)
  • Chopped green onions
  • Diced tomatoes
  • Shredded cheese

How to Make It:

  1. On a large piece of foil, lightly spray cooking spray
  2. Add meat at bottom, then a handful of hash browns and vegetables
  3. Crack an egg or 2 on top and season with salt and pepper
  4. Wrap up foil pack and place on a hot BBQ for 15-20 minutes
  5. Once meat is cooked, add shredded cheese and place back on the BBQ for a few more minutes
  6. Unwrap and enjoy

You can add your own signature spices, or pair it with a side of fruit for the perfect Sunday brunch with friends or family.

Campfire French Toast

Just because you’re not at your favorite breakfast place doesn’t mean you can’t have French toast.

The best part about this campfire meal in foil is that it’s not as messy as you might think. Plus, you can basically feed your whole campground with this camping recipe (or save some leftovers for the next morning).

What You’ll Need:

  • A loaf of your favorite bread (sliced)
  • 8 eggs
  • ¼ cup milk
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ¼ cup sliced almonds
  • 1 container fresh strawberries
  • Powdered sugar
  • Syrup

How to Make It:

  1. Wash your berries, then dice half and slice the other half
  2. Wrap the loaf of bread in parchment paper, then loosely in foil with bread slices slightly open
  3. Sprinkle the diced strawberries over the loaf and in between slices (set aside the sliced strawberries)
  4. Sprinkle in the almonds
  5. Whisk eggs, milk, vanilla, and cinnamon in a large bowl until frothy and light
  6. Wrap the foil around the bread a little tighter before pouring egg mixture evenly over the entire loaf
  7. Wrap up the foil pack and place over a campfire or grill on low to medium heat for 40 minutes, or until bread no longer looks soggy
  8. Remove from heat and let sit for 10 minutes
  9. Add powdered sugar, syrup, and sliced strawberries

Who knows, this easy and delicious camping meal might just become a new family tradition.

Campfire Popcorn

Popcorn makes a great camping snack, especially if you’re planning on having a movie night or hanging out in your Roofnest.

You can make a batch quickly and serve it up after dinner, or pack it into sandwich bags for energy out on the trail.

What You’ll Need:

  • ¼ cup popcorn kernels
  • 1 tbsp vegetable oil
  • ¼ tsp garlic powder
  • Salt

How to Make It:

  1. Toss popcorn kernels and vegetable oil in a pie tin
  2. Cover lightly with foil, creating a dome shape on top to allow room for kernels to pop
  3. Place on fire and listen to the pops
  4. With a pair of tongs, shake the pie tin lightly until the popping stops
  5. Season with salt, garlic powder, or load up with butter

Making the popcorn is an event in and of itself, and your kids will enjoy watching the foil dome fill up with their favorite salty snack. Just be careful when you open the foil pack, as it’ll be full with popped kernels ready to fall out. 

Cheesy Asparagus Foil Packs

No oven? No problem.

This melty side dish cooks up nicely on the fire in a foil packet and compliments plenty of main courses.

What You’ll Need:

  • 1 pound asparagus, trimmed
  • 2 tbsp olive oil
  • 3 gloves minced garlic
  • Juice from ½ a lemon
  • Dried oregano
  • Red pepper flakes
  • Salt & Pepper
  • 2 cups shredded mozzarella
  • Grated parmesan to garnish

How to Make It:

  1. Toss asparagus with olive oil, garlic, lemon juice, and oregano in a large bowl
  2. Season with salt, pepper, and red pepper flakes
  3. Divide asparagus between 4 foil packs, then sprinkle cheese over each
  4. Fold and seal foil packs
  5. Place on grill or campfire for 15 minutes, or until cheese is melted and asparagus is tender
  6. Garnish with parmesan and more red pepper flakes

If you’re feeling fancy, you can swap out mozzarella for fontina or Gruyère for a gourmet experience.

Lemon Salmon

Wild salmon is one of those dishes that tastes amazing fresh, but isn’t always easy to perfect (both in the kitchen or at a campsite).

Try this surprisingly simple campfire dinner with fresh or locally caught salmon you score on your fishing trip.

What You’ll Need:

  • 2 lemons (thinly sliced)
  • 1 large salmon fillet (approx. 3 lbs.)
  • 6 tbsp butter
  • 2 tbsp honey
  • 3 gloves minced garlic
  • 1 tsp dried oregano
  • Chopped fresh parsley to garnish

 How to Make It:

  1. Season your fish with garlic, honey, and oregano
  2. Place fillet in foil packet and scatter lemon slices on the fish
  3. Add the butter and seal up the foil
  4. Cook on campfire or grill for 10-12 minutes, until salmon is tender
  5. Add a side of cheesy asparagus and you’re ready to go

When you serve up this salmon you’ll get that smoky flavor that’s best experienced out in the wilderness. Bonus points if you caught the fish yourself.

Campfire Tex Mex

This spin on Tex Mex will have you feeling like a true pioneer. It’ll fill you after a long day of activities and set you up for a great night’s rest in your RTT.

Even better — it’s healthy without necessary tasting like it.

What You’ll Need:

  • 1 15 oz. can of navy beans, drained and rinsed
  • 1 can diced tomatoes, drained
  • 1 can mini corn or niblets
  • 1 tbs Mexican spice blend
  • 4 boneless skinless chicken breasts, diced
  • Green onion for garnish

How to Make It:

  1. Combine everything but the cheese and green onion in a large bowl
  2. Divide the mixture evenly between 4 foil packs and seal tightly
  3. Place each packet on a BBQ grill for 20-25 minutes, turning occasionally
  4. When chicken is fully cooked, removed from fire an top with cheese and green onion
  5. Dig in

For a spicier mix, add your own blends of herbs or hot sauce. Leftovers also make great filling for a breakfast burrito.

Berry Crisp Foil Dessert

It’s safe to say S’mores may need to watch its back — this camping dessert recipe is one of the best.

When you feel like accompanying your foil wrapped camping dinner with a foil wrapped dessert, you can’t do much better than this crispy treat.

What You’ll Need:

  • 3 cups mixed fresh berries (raspberries, blueberries, blackberries)
  • Juice from ½ a lemon
  • ¼ cup brown sugar
  • 2 cups rolled oats
  • 1 tbsp flour
  • 1/3 cup chopped pecans
  • ¼ cup butter, softened in cubes
  • 1 tsp cinnamon
  • ½ tsp salt
  • Vanilla ice cream for serving

How to Make It:

  1. Pre-heat grill or get campfire up to high heat
  2. Grease 8×8” foil packets with cooking spray
  3. Toss berries, lemon juice, and 1tbs brown sugar in large bowl then set aside
  4. In another bowl, stir together oats, flour, pecans, butter, cinnamon, salt, and the rest of the brown sugar
  5. Layer berries and crumble topping into each foil packet
  6. Cook for 15-20 minutes
  7. Cool for a bit, then toss on a scoop (or 2) of ice cream
